Metal pizza peels typically have an aluminum blade or paddle. The blade, or the paddle if you prefer, is plenty thin enough that it can easily slide beneath the pizza and above the stone so you can quickly remove the pizza – ‘scoop’ the pizza up.

Most if not all pizza peels, wood and metal inclusive, have wood handles. This should ensure that you don’t burn your hands. 

There is a drawback with regard to metal pizza peels: The dough has a tendency for sticking to the blade. Sure, freshly made pizza dough also sticks to wood blades, but not to the same extent. 

As with wood pizza peel blades, dust your aluminum blade with cornmeal. This makes it easier to slip the raw dough off. You can use flour but cornmeal has larger grains so the ‘sliding off’ is more easily achieved.

It’s for this reason that some avid home pizza makers own two pizza peels – one wood, one aluminum. They use the wood peel to place the pizza inside the oven and they use the aluminum peel to take it out.
